If you've ever tried an olive right of the bitter taste left in no doubt the memory of your palate. The bitterness is due to oleuropein. Fortunately, this compound can be removed, and that's what you do when you cure your olives. Usually people use the water to cure green olives and a cure for black olive brine. Some people use a bath of soda instead of a water treatment green olives, but it is unnecessary and perhaps dangerous, then forget it.

For green olives, here is a method of treating water. First, each green olive groove along its length. Rinse cold water. Place olives in a clean container and cover with cold water. Weigh the olives to keep them submerged – water balloons or plastic bags filled with fine Water Works. Store in a cool corner of the basement or garage and change the water every day for 2 weeks. Rinse the olives and place in jars, leaving about an inch of space at the top. Next, prepare a brine solution. For 5 pounds of olives, boil about 8 cups water and dissolve ¼ cup salt (not iodine). Cover each jar with olive brine. You can then add whatever flavors appeal to you. Classic additions include bay leaves, garlic, grated lemon or oregano. Garnish each dish with olive oil and cover screw. Store in a cool place. The olives will be ready in a few weeks and remain palatable for a year.

Of black olives, it is not necessary to decide the fruit. Proceed as green olives, ripe fruit, and keep submerged for two weeks changing the water every day. Then rinse the olives and cover with a strong brine of 1 cup salt (not iodized) in 1 gallon of water. Each week, drain olives and add a new brine solution. It will take about a month. The brine must be the last half of the workforce. Rinse and dry the olives, then place in jars. Add flavorings according to your taste, like vinegar, dried herbs and spices. Cover with olive oil on top and screw cap. Store in a cool. That will be good for at least a year.
